Easy and Healthy Chia Seed Jam

Chia Seed Jam

  • 2 cups chopped fruit (I recommend berries)
  • 1 tablespoon lemon juice
  • 1 tablespoon honey
  • 3 tablespoons chia seeds, plus more if needed

Prepare the fruit by removing stems, pits, seeds, and skin, as needed depending on type of fruit. Chop larger fruits into smaller pieces, but berries can be left whole.

Transfer the fruit to a  saucepan over medium heat. Cook until the fruit breaks down and starts to become syrupy, (about 5 to 10 minutes). Mash the fruit with the back of a fork as it cooks, breaking it down further.

Remove from the heat, stir in the honey and lemon juice and then stir in the chia seeds and let stand for 5 minutes to thicken. If it does not appear thick enough, stir in more chia seeds about 1 tsp. at a time.

Once the jam has cooled to room temperature, transfer it to a glass jar. The jam will continue to thicken as cooled, and will stay good in the fridge for up to 2 weeks, and can also be frozen for about 3 months.
